Does anyone have a tutorial about crocheting an ami such that instead of creating a spiral shape as you stitch, you create increasing bands so that it's easier to change color? Am I making sense?

For instance, I'd like a video or an illustration that shows something like this:

I am trying to make a friend the Ninja from the Creepy Cute and I can't seem to get started. I'm not understanding the directions from the book. Do I work the stitches into the loop and is it a single stand or double strand? I can't seem to get it to work.
